Burrata (buttered in Italian) is a fresh Italian cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains both the mozzarella and cream, giving it a soft and delectable texture. There are many recipes and accompaniments for burrata, but for me, the best will always be my first experience: prosciutto, grilled veggies, tomatoes, basil, Tuscan bread and a full bodied red wine. I was first introduced to Burrata at a friend’s Enoteca in San Niccolo, Firenze. I had no idea what it was and didn’t know what to expect. When this plate was set before me, there was so much love and deliciousness built in, that I had an immediate desire to cry and sing opera simultaneously.
And when I cut into the Burrata ever so gently, and the panna (cream) flowed out so beautifully, I do believe that I actually heard angels sing. It was a personal culinary moment that I will never forget and I thought I’d share it with you. Buon appetito!
